CARAMEL CEREAL

This recipe is a family favorite that I got from my Mom years ago. The caramel is made with Whipping Cream, and is really delicious. It's one of those snacks, that once you start.....you're in big trouble, because you can't stop. If I take this somewhere, I'm always asked for the recipe. It's addictive! Keep in a sealed plastic bag, or a large bowl with lid, and it stays chewy for days. This makes 2 large cookies sheets.


 


  INGREDIENTS:

2 cups Sugar
1 3/4 cups light Karo syrup
1/2 Cup Butter (1 stick)
1/2 Cup Margarine (1 stick)
1 Cup Whipping Cream
1 cups sliced almonds
2 tsp. pure vanilla

Bring sugar, karo syrup, butter & margarine to a boil over medium heat, stirring constantly. Make sure that sugar is well dissoved, then stir in the whipping cream, & stir often while boiling.
Cook to a soft ball stage - 234° or until a small amount of syrup dropped into chilled water forms a ball, but flattens when picked up with fingers . Remove from heat & add 2 teaspoons good vanilla and sliced almonds. Pour caramel mixture over:

10 cups rice chex
5 cups kix cereal
6 cups rice crispies

Mix the caramel syrup and cereal together in large bowl. Pour out onto 2 lg. buttered
cookie sheets. Let cool completely. ( I cover my cookie sheets over night with clean towels, then in the morning you can break the caramel cereal apart and store in ziploc bags or covered bowl.
