CHEWY CHOCOLATE COCONUT MACAROONS

Coconut Macaroons are one of my favorite cookies. They are also the easiest cookies you will ever make. This is the chocolate Macaroon variety. They are delicious.





 Ingredients:

 5-1/3 cups flaked Coconut
 1/2 cup Hershey's Cocoa
or less...adjust to your taste
1 can (14 oz.) sweetened condensed milk (not evaporated milk)
*I use the fat free variety & it works great (green label)
 2 teaspoons vanilla extract
1 teaspoon almond extract (opt)

About 24 red candied cherries, halved (opt)

 Directions:


1. Heat oven to 350°F. Generously grease cookie sheet.

2. Stir together coconut and cocoa in large bowl; stir in sweetened condensed milk and vanilla until well blended. Drop by rounded teaspoons onto prepared cookie sheet. Press cherry half into center of each cookie.

3. Bake 8 to 10 minutes or until almost set. Immediately remove from cookie sheet to wire rack. Cool completely. Store loosely covered at room temperature. About 4 dozen cookies.
